Ingredients

  • 2 cups shredded cooked chicken about 10 ounces
  • 8 ounces cream cheese softened to room temperature
  • 1/2 cup ranch dressing
  • 1/2 cup buffalo-style hot sauce
  • 3/4 cup shredded mozzarella cheese divided (see instructions)
  • 1/2 cup shredded cheddar cheese
  • 2 green onions thinly sliced and divided
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons blue cheese crumbles optional, for topping

Equipment

  • Large mixing bowl
  • Sturdy spoon
  • 8x8-inch baking dish or 1.5-quart oven-safe dish

Method

  1. Heat the oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish.
  2. In a large bowl, stir the cream cheese, ranch dressing, hot sauce, garlic powder, and black pepper until smooth and well combined.
  3. Fold in the shredded chicken, 1/2 cup of the mozzarella, all of the cheddar, and half of the green onions. Mix until the chicken is coated evenly.
  4. Spread the mixture into the prepared dish in an even layer. Sprinkle the remaining 1/4 cup mozzarella over the top.
  5. Bake for 20 to 25 minutes, until the edges bubble and the top is melted and lightly golden.
  6. Rest for 5 minutes. Top with the remaining green onions and the blue cheese crumbles, if using. Serve warm.
